How to Make Strawberry Simple Syrup

My husband really likes mojitos. When I was putting together cocktails for his birthday, we happened to have mint and strawberries in the fridge so I decided to make Strawberry Mojitos. But to make things simple for myself since I knew we’d need a lot I made a pitcher of mojitos.
For these mojitos, I not only added muddled strawberries, I made a strawberry simple syrup.
Strawberry Simple Syrup
- 1 cup (approx.) sliced or quartered strawberries (hulled if you have time for that)
- 2 cups water
- 2 cups sugar
Add water, sugar, and strawberries to a saucepan over medium heat. Stir. Let simmer until strawberries look translucent. Strain and cool before use.
Note: Ripe to overripe strawberries are best.
You can use the sweetened, mushy, strained strawberries that are leftover in a dessert. We made them into hand pies. You could also just have them with ice cream. Yum.
Alternative: To make Mint Strawberry Simple Syrup you can add a handful of mint after you’ve removed the saucepan from the heat and let the mint steep in the simple syrup for 30 minutes.
Strawberry Mojito Pitcher
- 1 cup mint leaves (approx.)
- 1 cup sliced strawberries (approx.)
- 1.5 cups lime juice
- 1.5 cups strawberry simple syrup
- 2 cups white rum (I used Kula Rum from Ocean Vodka)
- Ice
- Club Soda
Add mint, strawberries, and lime juice to a pitcher. Muddle.
Add simple syrup and rum and stir. (Isn’t it a pretty color!)
Add ice to a glass (Collins or rocks if you’re like me and don’t have a Collins glass). Fill halfway with pitcher mix and top with club soda. Stir
Garnish, blah, blah, blah. Enjoy.
Notes: I made the pitcher mix ahead of time and kept it in the fridge until we were ready to drink. You could add the soda directly to the pitcher to save some steps, but I would only do that if you are going to drink it all right away.
This is the juicer we have. It’s really helpful when you need enough lime juice for a pitcher of mojitos.
